The culinary product of Rajasthan is rated among the best by the connoisseurs of food all over the world. It has been described as royal and majestic as the state of Rajasthan itself.

In the months of March and April especially in the Gangaur festival(click on the link to know more about Gangaur festival)celebrated in Rajasthan, a special sweet recipe is made and is distributed. Although one can easily buy this delicacy in the market in India but if you are outside India and want to make it or want to try this at home you can easily do it. Although it may look a bit hard to make; but actually it is quite easy to make. Let us know in detail how to make this sweet dish.

For making this dish, you will need a flat bottomed pan. The diameter of the pan will decide the size of the Ghevar. It is best if the pan is of 6-7 inches width.

Ingredients for making Ghevar



You will need the following ingredients to make Ghevar-
For the Ghevar
  • Flour(maida)- 3-4 cups

  • Ghee- 150grams

  • Milk- 100grams

  • Water- 2 cups


  • For the sugar syrup
  • Sugar- 1 ½ cup

  • Water- 1 cup


  • Procedure to make the sugar syrup


    For making the sugar syrup, take a bowl and add the sugar (1 ½ cup ) and water (1 cup ) and keep it on the gas in low flame. After boiling for five minutes, take it off and keep it to cool.

    Procedure to make Ghevar


  • First clean the flour properly and put it aside in a container.

  • Now take a bowl and add the milk and the ghee(50 grams) and add the flour to it.

  • Now using a spoon make a paste from the mixture.

  • Add water to make it a finer and keep mixing it properly.

  • When the dough is quite fine and it gives no trail on dropping from the spoon, then your dough is ready.

  • Now take the pan and add the remaining ghee to it.

  • Now put the flame on high and wait for the ghee to get hot.

  • When the ghee is hot, using a spoon slowly pour the dough into the ghee.

  • While adding the ghee foam will be formed.

  • Add the next batch of the dough after one or two minutes when the foam has subsidised.

  • You can add as much dough as you want according to the size of the Ghevar you want.

  • Now lower the flame and keep it in the gas till the colour changes to light brown.

  • When the Ghevar is ready, remove it from the pan and wipe off the excess oil.

  • Dip the Ghevar in the sugar syrup and take it out in a plate.

  • Your Ghevar is now ready to be served. You can garnish it with Rabri and Mewa to make it more delicious.
