Rice Kheer, one of the favorite recipes for many of the people from Bombay (Mumbai) which they relish in the hot summer season of Mumbai, and also in the cool winter seasons of Bombay.Rice Kheer - A Bombay Specialty
Ingredients of Rice Kheer
1 cup rice
2 cups milk
3/4th cup sugar
1 tspn Ghee
1 tspn Cardamom (Elaichi) Powder
a pinch of salt
nuts to garnish
Procedure to make Rice Kheer
First wash the rice and then let it dry in the sun for about an hour.
After the rice is dry, roast it in the ghee until it is a bit warm.
Then add water for the rice to cook.
Let the rice cook until it is soft.
After the rice is cooked remove it from the flame and mash it with a ladle until it is quite smooth.
Then slowly add the milk little by little and keep stirring continuously so that no lumps are formed.
Then add the sugar, a pinch of salt and the cardamom powder and then stir and keep on the gas and bring to a boil.
Then garnish with crushed nuts and if you want a bit of saffron.
