Kootu is an important accompaniment of South Indian lunch menu. This is a dish that is a combination of vegetables and dals along with spices. This Tamilnadu kootu can be served with rice and papad or any fried vegetable curries. In this article I am sharing a new recipe of kootu which does not use the usual vegetables like cabbage, brinjal, etc. but kootu is made of tomato and cauliflower. Try this tasty Cauliflower tomato kootu in your kitchen.

Ingredients for making Cauliflower tomato kootu


• Cauliflower – 1 cup
• Tomatoes – 4
• Toor dal – 3/4 cup
• Turmeric powder – 1/4 tsp
• Coriander powder – 1 tbsp
• Channa dal – 1 tbsp
• Urad dal – 1 tsp
• Red chillies – 4
• Black pepper – 1/2 tsp
• Grated coconut – 1/4 cup
• Oil – 1 tsp
• Salt to taste
• Tamarind paste – 1 tbsp
• Coriander leaves for garnishing

Seasoning:
• Oil – 1 tsp
• Mustard seeds – 1 tsp
• Urad dal – 1 tsp
• A sprig of curry leaves
• Pinch of asafoetida

Method of Preparation of Cauliflower tomato kootu


1. Wash the toor dal with water and cook by adding ¼ tsp turmeric powder in a pressure cooker.

2. Heat oil in a frying pan, add channa dal, urad dal, red chillies and pepper and fry till it becomes brown.

3. Next add the grated coconut and sauté for 2 minutes, remove and transfer this to a plate.

4. Allow this to cool and grind the mixture to a fine paste.

5. Heat the tamarind paste in a kadai along with a cup of water.

6. Cut the cauliflower into small florets and immerse this into hot water for 2 minutes.

7. Now add the tomatoes and cleaned cauliflower to the boiling tamarind water in kadai and allow this to boil for 5 minutes.

8. Add the ground paste and cooked dal to the above mixture and mix well.

9. Allow this to boil and remove from heat.

10. Season this kootu with the seasonings and garnish with coriander leaves.
